Carpenters bench build

I may be mad but I'm considering having a go at making a proper carpenters bench with a laminated top - I don't have a power jointer or planer so wondering how difficult a task this might be - could I hope to plane a laminated top flat by hand? I don't mind some hard work but equally don't want to set myself a fools errand...

I'd like to use construction grade / structural pine from the big green shed to keep the cost down and rip cut the rounded edges off with my table saw before gluing up. Or is it better to use DAR boards which in theory should be pretty close and require less manual planning? Happy to pay a bit more for timber if it will mean a markedly easier or better result. The garage still needs to be a home to our cars so I'm limited to probably only a small bench 1.4m long and no deeper than 60cm so it won't be some monster 8 foot long roubo style bench or anything. Any and all wisdom gratefully received - I know some may suggest ply or hollow core for the top but specifically not wanting to pursue those options
