Jarrah Slab Natural Edge

Gday all

I have a jarrah slab which I have thicknessed down to 45mm thick yesterday. Its about 1100 x 450mm. I am now wanting to prepare the natural edge, but I am a bit unsure about a few things as I have never done it before.
I also have a smaller slab which is an offcut from the end of the main one to practice on, which is handy. I have already started to attack one edge of this piece with a pretty stiff wire brush attached to my angle grinder.

I have noticed the bark is in 2 layers. There is the very weathered dark bark on the outside (which is quite thin) and a light coloured bark underneath which is quite soft and its anywhere between 5 and 10mm thick, but in parts it is also quite hard. Where it gets quite hard the angle grinder with the wire brush actually starts to burn the wood. Where it did start to burn I used my random orbital sander and it seemed to get rid of most of the burning. I have heard that all the bark needs to be removed or it will eventually fall of over time, does this include the inner light coloured bark? Is this actually true? If I dont take off all of the light coloured bark the piece after I wet it down actually looks quite good. So I am unsure of how much bark to take off. I have taken all of the bark off one end of my practice piece and it looks ok, maybe a little darker than I expected. I am more than willing to get rid of all of the bark if this is what is required.

Are there other tools I could be using beside the wire brush in my angle grinder and my random orbital sander?

Also I usually finish most of my work with wood oil then wax and I have plenty of oil. Would poly or nitro be a more suitable finish for the top and the edge? It is going to be a top for a TV cabinet so it wont be getting too much use. I am a more natural looking finish type of guy.
