Best Seeds to sow heading into a UK winter?

My kids and I want to start growing some of our own vegetables, we already have an apple tree that we take full advantage of, but we want to grow some vegetables from scratch.

Not sure if anyone can help me, but I would be so happy if anyone knows what vegetables are best to grow in the UK through the winter?
