Which veneer face to use ?

I have a couple of sheets of Qld Walnut veneer, 0.8mm thick, and 150mm wide. They are pretty old, and cupped slightly such that when you look along the length, the outer long edges are raised 25mm when the sheet sits on the concave base.

They look like they are adjacent sheets in the veneer slicing process.

Can anyone please advise if any particular face that should be used as the show face ? ie., the concave face or the convex face?

If there is a particular way, how do you book match the sheets for joining and gluing on a substrate?
